Cod Parmesan

Similar to Eggplant Parmesan this recipe substitutes Alaskan Cod Fillets for the Eggplant. It is a relatively quick main course that goes well with spaghetti and salad. This recipe serves two.

2 medium sized Alaskan Cod Fillets

1 egg

1/3 cup of Italian bread crumbs

2 tbsp olive oil

3 slices of mozzarella cheese

1/2 cup of spaghetti sauce

Preheat olive oil in medium frying pan over medium heat. Beat egg in a large flat bowl and then did each cod fillet in egg mixture followed by bread crumbs. Fry breaded fillets until golden brown and then move fillets to deep baking dish. Spoon spaghetti sauce onto each fillet and then cover each with 1 1/2 slices of mozzarella cheese. Bake in oven at 350 degrees Fahrenheit. Server with angle hair pasta and salad.
