Easy Chicken Enchiladas

One of our new favorites, these are not traditional enchiladas with the tortilla rolled around the contents. More of a bake, this is a fast, but good tex mex dinner. 

1lb boneless chicken thighs

1 can enchilada sauce

1 can diced chillis

6 oz shredded cheese

1 small onion

2 tsp powered garlic

2 tsp cumin

1.5 tbs of olive oil

1 tsp taco season

2 cloves of minced garlic

1 cup frozen corn

Brown chicken on one side, but before turning add cumin, garlic powder, taco seasoning and then turn and cook. Remove chicken from pan and add onion and garlic. Saute onion and garlic and then add corn a diced chillis. Pull chicken and then cook with mixture in pan. In 13"x9" baking pan layers tortilla, sauce, chicken mixture, more tortilla, sauce and cheese. Bake in oven at 350 until bubbly and brown.
