Spinach and Rice

We have several variations of this dish that we make often, but this is probably the recipie that I go to most often. A relatively quick side dish that goes well with steak or fish.

  • 1 cup cooked rice
  • 1lb fresh chopped spinach or equivalent 1 16oz package of frozen chopped spinach
  • 1 small onion finely chopped
  • 2 tbsp chopped garlic
  • 2 eggs
  • 1/4 cup milk
  • 1/2 cup shredded swiss cheese
  • 1 tbsp Worcestershire sauce

Preheat oven to 350 degree. Cook rice and chop or defrost chopped spinach. Beat eggs and add milk. Combine all ingredients in oven safe 1 3/4 quart corning ware dish. mis and bake for 40 to 35 minutes or until golden brown on top.
