Cheese Crackers
A quick recipie with a few simple ingredients that creata a tasty snack! These remoind me of Cheez-It crackers.
Ingredients
- 8 oz medium cheddar cheese in block form
- 1 cup all-purpose flour
- 4 tbsp of unsalted butter or coconut butter*
- ½ tsp dry ground mustard
- ¾ tsp garlic salt
- 1-½ cups all-purpose flour
- 3 tbsp cold water
Directions
Using a food processor or cheese grater, shred the cheddar cheese.
Add flour, butter, salt, ground mustard, and shredded cheese to the food processor and pulse until the mixture resembles coarse crumbs.
While you continue to pulse the food processor, add 1 tbsp of water at a time until the dough takes form.
Remove the dough, wrap or cover it in a bowl, and chill it in the refrigerator for at least 30 minutes.
Preheat oven to 350°F. Prepare the baking sheet by lining it with parchment paper.
On lightly floured baking mat, roll out dough quite thin (1/8 inch or less). Cut into one-inch squares. A pastry wheel or pizza cutter works well. Use the tip of a skewer to poke a hole in the middle of each cracker.
Place crackers on a baking sheet close together, not touching, as they do not expand.
*I used coconut butter in this batch and it worked wonderfully, but normal unsalted butter works fantastic.
Bake for 18 minutes or until crispy. They should be lightly browned on the bottom and firm to the touch. The browner they are, the crispier the crackers will be. Cool in the pan for 5 minutes, then remove to a wire rack to cool completely.
