Carmelita Cookies

One of my favorite memories of Christmas as a child was my Grandmothers Carmelita Cookies. These are simple to make and are a great chocolately treat during the holidays. This recipie will fill a 13x9 baking pan.

  • 1 cup rolled oats
  • 1 cup flour
  • 3/4 cup brown sugar
  • 3/4 cup melted butter
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 3/4 cup carmel ice cream topping
  • 1 cup Hershys Special Dark Choclate Chips
  • 1/2 cup chopped walnuts

Mix flour, rolled oats, brown sugar, baking soda, salt, and melted butter. Save 1/3 of the mixture for later and press the remaining amount into the bottow of a buttered 13x9 baking pan. Bake in oven at 350 degrees for 10 minutes.

When finished baking add chocolate chips and chopped nuts. Blend carmel sauce with 3 tablespoons of flour and then pour over the chocolate chips and chopped nuts. Pour remianing oat mixture over the top and bkae for an additional 20 minutes at 350 degrees. After removing from oven let the cookies cool for 2 hours before cutting.

    Whoa, those are amazing! In addition to being a great treat for the holidays, I bet they would also be outstanding for a Super Bowl party!
