Cheese Pastry Hors d'oeuvres

I remember my father making these cheese hor d'oeuvres over the holidays a few times when I was a child. They taste great and can be frozen in smaller portions and heated when desired.

2 1//2 cups flower

1 cup butter

1 cup lite sour cream

seasoned sea salt

3 cups shredded cheddar cheese

Combine flour, butter and sour cream into mixer and mix. Divide into 4 portions, wrap, and chill for at least 4 hours. Roll one portion of dough on floured surface to a 12x6 inch rectangle. Sprinkle seasoned salt and pepper as well as a 3/4 cup of shredded cheese. Starting from a long edge, roll up jelly-roll style. Seal each end by pinching dough together. Place seam down on ungreased cookie sheet and cut half way through in 1 inch intervals. Sprinkle with paprika and then bake at 350° for 30 to 35 minutes or when pastry is browned and flaky.
