White Chili

This recipe is a chicken based Chili that is great when prepared in the crock pot or in a large pot on the stove top. A nice change from a traditional red chili and great during the summer.
1lb boneless chicken breast cut into bitesize pieces
2 15oz cans of chicken broth
1 15 oz can of navy beans
1 15oz can of hominy
2 medium sized jalepeno peppers
1 cup cooked rice
1 medium sized yellow onion
1 garlic clove
shredded mozzarella cheese for toppings
Place chicken and broth in crock pot or large cooking pot. Mince garlic, dice onions and jalepeno peppers and then add all three to the pot. Add in cooked rice, hominy and beans then stir. Cook on low for 4 to 5 hours in crock pot or until chicken fully cooked if cooking on the stove top. Server with tortilla chips and shredded mozzarella cheese.
